Meet Austin Barthold, tribal citizen of Lac Courte Oreilles Band of Lake Superior Chippewa Indians.
Gatherings Café is a native restaurant located in the heart of the Franklin neighborhood at the Minneapolis American Indian Center. Gatherings Café is managed by chef Austin Barthold, the first Native American graduate of Le Cordon Blue College of Culinary Arts in Mendota Heights.
At the cafe, Barthold’s most popular dishes are walleye cakes and their line of bison sandwiches. His food suppliers include local sustainable native food producers and growers. They feature indigenous foods.
Barthold runs the restaurant and a catering business, and also volunteers to cook for diabetics at the Department of Indian Work in St. Paul.
His resume also includes an internship program he designed, where youth and aspiring chefs learn the ropes of the running the restaurant, the back of house -working with suppliers, ordering, developing the menu, prep and cooking, as well as learning the front of the house and customer service. Two of his interns are now taking over the day-to-day business.
MNIBA’s film crew recently visited Austin and his team and enjoyed an amazing lunch, which included bison on whole grain wild rice bread with a raspberry horseradish and fresh greens.
