Challenge

Low income communities often lack basic resources such as access to affordable fruits and vegetables and the knowledge of their nutritional values which compounds their risk factors for chronic disease. This lack of food literacy and access to healthy food choices while bad enough is just part of the problem. Over the last century, traditional healthy eating habits were abandoned when social changes such as migration and poverty upended people's lives.

Solution

Mindful Eating for the Beloved Community (MEBC), is designed to educate the community about healthy food practices and elevate wellness as a primary goal. We have always emphasized food justice, equity and diversity in the culinary space, and we will continue to create opportunities as we challenge entrenched injustices. Nutritional literacy which is at the center of our program will provide the framework for behavior change and impact better choices led by chefs that are from these communities.

Long-Term Impact

As we approach our third decade, we will strive to meet our own goals and those of the UN with an emphasis on raising financial support and bringing in thought leaders and advocates to help us achieve a sustainable future for the community. The Farm and Ocean Justice Project Project seeks to develop an integrated farming model that produces nutrient rich shelf stable food products and livestock feed while reducing food waste for underserved farm communities in Puerto Rico.
