Vegan Recipes in Cooking Classes

The Garden of Hope has prepared a series of vegan recipes demonstrated by participants in our garden-to-kitchen cooking classes.

One of the recipies is for a holiday favorite - Guatemalan Holiday Punch. This is a warm, sweet, spiced fruit drink — traditional and festive.

Ingredients: ½ pineapple ½ papaya 4 oz raisins 2 bananas 4 apples 4 oz prunes 4 oz raisins (yes, twice!) Sugar to taste 4 oz hibiscus (jamaica) 1 cinnamon stick

Instructions:

1. Peel and dice pineapple, banana, apple, and papaya.

2. Boil the fruit peels with hibiscus and cinnamon, then remove the peels.

3. Add all diced fruit, raisins, and prunes. Simmer 20 minutes.

4. Add sugar to taste.

5. Cook 15 more minutes or until fruit is soft. Serve warm.
