Hola Aliad@s esperamos que al leer esto esten muy bien.
Esta ocasión nos gustaría compartir algo unico que sucede una vez al año, en varios lugares del país salen en la primer lluvia muy fuerte del año salen una especie de hormiga, a esta en la costa le llamamos CHICATANAS.
Con esta hormiga, se atrapan, se asan en el comal y se les coloca sal, así ya se pueden comer pero se hacen una infinidad de cosas por ejemplo una salsa de chicatanas con costilla de puerco, talvez con tichindas, o pollo. Pero que algo es en definitiva es que es super rico, y todo esto es parte de las tradiciones la costa y tambien podrás encontrar la receta en el recetario inspirados en la cultura indígena y afromexicana de la costa de Oaxaca y toda esta sabrosura se hace en los hornos y fogones que juntos se han reconstruido o construidos desde cero.
Oler estos sabrosos gisos son las que nos impulsan a seguir, y contigo es posible. Juntos no solo se reconstruyen hornos y fogones, tambien lazos, se mantienen tradiciones y se rescatan saberes. This time we would like to share something unique that happens once a year, in various parts of the country a kind of ant comes out in the first very strong rain of the year, we call this one on the coast CHICATANAS.
With this ant, they are trapped, roasted on the comal and salt is placed on them, so they can be eaten but an infinity of things are made, for example a chicatana sauce with pork ribs, perhaps with tichindas, or chicken.
