In response to high levels of food scarcity, obesity, and nutrition-related illness in rural Oaxaca, Puente proposes working with farmer families to grow, consume, and commercialize amaranth, a pseudo-cereal that contains high levels of protein, calcium, fiber, iron, vitamin C, and phosphorus compared with other grains.
This project aims to empower rural and indigenous young families to farm amaranth using agro-ecological methods, improve nutrition and health, and organize with other community members to create jobs and economic opportunities locally.
